About the Recipe

Eggs are great...but they can get boring sometimes. Here's a healthy way to make them rock!

Ingredients

  • 6 eggs

  • 1 cup Pork or Chicken Sausage

  • 1 T Fresh Parsley

  • 1/4 cup Sharp Cheddar Cheese

  • 1 package Prosciutto

  • Olives

Preparation

  1. Crack 6 eggs into bowl to scramble.

  2. Mix/Scramble eggs with a fork until creamy yellow consistency and set aside.

  3. Finely chop the parsley and put aside for later.

  4. Cook the sausage making sure to break it apart (set aside any extra to use in another dish)

  5. Add the eggs to the cooked sausage, thoroughly mix.

  6. Add the cheese so it is thoroughly mixed into the egg mixture.

  7. Cook until desired consistency.

  8. Evenly distribute onto 2-3 plates.

  9. Sprinkle the chopped parsley onto the egg mixture.

  10. Add 3-4 olives onto the plate, then add one piece of prosciutto to each plate.

  11. Serve and enjoy!
