Roast Shrimp with Orange & Tarragon

About the Recipe

Super easy meal in just one pan!

Ingredients

  • 3 Tablespoons of Olive Oil

  • 4 Sprigs of fresh tarragon (or ½ tsp dried if cannot get fresh)

  • 1 - 1 ½ pounds of large shrimp, peeled and deveined

  • ½ cup of fresh squeezed orange juice

  • Zest from 1 orange, finely minced

  • Salt & Freshly ground black pepper to taste

Preparation

Instructions:

  • Preheat the oven to 450 degrees F.

  • When oven is hot, then warm 2 Tablespoons of the olive oil in a baking

  • Add the tarragon and put pan into the oven until the tarragon begins to sizzle.

  • Take the pan out of the oven and add the shrimp to the pan.

  • Sprinkle with orange juice, orange zest, salt, pepper, and the remaining Tablespoon of olive oil.

  • Put back in the oven and roast until the shrimp turns pink, about 10 minutes.

  • Can be served as is for an appetizer or over rice, noodles or green salad for a full meal.


**Can also sub crawfish or scallops for the shrimp in this recipe.**
