Crustless Quiche Lorraine

Ingredients 1 tsp. extra-virgin olive oil 3 slices thick-cut bacon, chopped (freeze briefly or snip with shears for ease in cutting) 1 medium shallot, thinly sliced 6 large eggs 1/4 c. milk 1/8 tsp. Kosher salt 1/8 tsp. Freshly ground black pepper 1 c. shredded Gruyère cheese Chives, for garnish Directions In an 8" oven-safe nonstick skillet, heat olive oil on medium. Add bacon and shallot; cook 6 minutes, stirring occasionally. Whisk eggs, milk, salt, and pepper until combined; stir in Gruyère. Add eggs to skillet. Cook 3 minutes, stirring occasionally to form curds and allow runny egg to flow to bottom of pan. Bake at 375 degrees F for 8 minutes or until top is set. Garnish with chives.

No Bake Oatmeal Bars

Ingredients/Equipment 1 cup old-fashioned or quick cooking oats, gluten-free if preferred 1 cup unsweetened coconut (shredded) ¼ cup almond meal ¾ cup + 1 TBS creamy peanut butter (or other nut/seed butter) ½ cup honey or maple syrup ¼ to ½ tsp salt 1 tsp vanilla ¼ cup chocolate chips mixing bowls 8x8 baking dish microwave safe bowl or small pot

Keeping a routine during this time

We are all facing an unprecedented event that most of us have never seen the likes of. Luckily, we are not alone. Not even as a country, but as a world. Our schedules have been thrown into a new normal of balancing work and home school time with the kids, extra time with our pets. We all want our “normal” back. Frozen Yogurt Banana Pops

Ingredients 2 bananas 4 wooden sticks or straws 1 cup yogurt of choice 1/2 cup toppings of choice (granola, coconut flakes, chocolate chips, chopped nuts, etc.) Instructions Cut bananas in half and insert sticks or straws into sliced end of each banana half. Dip banana tops in yogurt and place on a parchment-lined baking sheet. Coat in toppings and freeze for 2 hours.
