Green Goddess Dressing

This recipe is easy to make and stores up to 1 week in the refrigerator, so blend a batch on the weekend and use throughout the week. 1 pound cremini mushrooms 3 slices bacon, chopped 3 tablespoons extra-virgin olive oil baby arugula 1/2 cup shaved Parmesan Freshly ground black pepper Special equipment: mandoline Directions Thinly slice the mushrooms on a mandoline and scatter on a rimmed platter.
